Ingredients
  1. 250g couscous
  2. half a cucumber
  3. 2 beef tomatoes
  4. 2 bunches of fresh parsley
  5. 1 bunch of fresh mint
  6. 8 spins onions
  7. 1 garlic clove, crushed
  8. Juice and grated zest of 2 lemons
  9. 6 tbsp extra virgin olive oil
  10. 500ml boiling vegetable stock
  11. Salt and freshly milled black pepper
Instructions
  1. Put the couscous in a large bowl and pour over the boiling stock. Cover with a plate and let it rest for 5 minutes, until the liquid has been absorbed. Rough up the grains with a fork.
  2. Finely chop the cucumber, tomatoes, onions (including green parts) parsley and mint.
  3. Add to the couscous with the grated lemon zest.
  4. Whisk together the oil and lemon juice, and season well with salt and pepper.
  5. Drizzle over the couscous and toss together.
  6. Serve with grilled fish, meat or chicken.
