Ingredients
  1. 175g shredded Turkey, Chicken or Duck leftovers
  2. 2 pink grapefruits
  3. 1 spring onion thinly sliced
  4. 2 tbs white wine vinegar
  5. 4 tbs extra virgin olive oil
  6. 90g creme fraiche
  7. 3 handfuls spinach leaves, lamb’s lettuce and rocket
  8. 8 walnuts chopped
  9. salt and freshly ground pepper
Instructions
  1. Put the sliced onion, vinegar, olive oil and creme fraiche in a bowl and stir to combine.
  2. Add the poultry pieces and toss together.
  3. Using a sharp knife, peel and slice the grapefruits.
  4. Arrange a bed of mixed salads leaves on a serving plate.
  5. Top with the poultry pieces, and scatter the grapefruits and walnuts pieces on top.
  6. Season with salt and freshly ground pepper.
