Ingredients
- 400g leftover Chicken or Turkey
- 4 Golden Delicious apples
- 1 red pepper
- 1 green pepper
- 1 small green lettuce, washed
- Juice of 1 lemon
- 50g chopped walnuts
- 50g walnuts for decorating
- 150g Cheddar or Emmental
Dressing
- 1 plain yoghourt
- 1tbsp Dijon mustard
- 6 tbsp extra virgin olive oil
- 2 tbsp white wine vinegar
- Salt and ground black pepper
Instructions
- Peel and chop the apples into small pieces. Toss in lemon juice
- Slice the peppers
- Cut the cheese into small pieces
- In a small bowl, mix together the yoghourt, mustard, oil, vinegar, chopped walnuts, salt and pepper
- Place the salad leaves at the bottom of a large bowl, add the chicken/turkey and cheese pieces
- Top with the sauce
- Toss before serving and decorate with the rest of the walnuts
