Ingredients
  1. 400g leftover Chicken or Turkey
  2. 4 Golden Delicious apples
  3. 1 red pepper
  4. 1 green pepper
  5. 1 small green lettuce, washed
  6. Juice of 1 lemon
  7. 50g chopped walnuts
  8. 50g walnuts for decorating
  9. 150g Cheddar or Emmental
Dressing
  1. 1 plain yoghourt
  2. 1tbsp Dijon mustard
  3. 6 tbsp extra virgin olive oil
  4. 2 tbsp white wine vinegar
  5. Salt and ground black pepper
Instructions
  1. Peel and chop the apples into small pieces. Toss in lemon juice
  2. Slice the peppers
  3. Cut the cheese into small pieces
  4. In a small bowl, mix together the yoghourt, mustard, oil, vinegar, chopped walnuts, salt and pepper
  5. Place the salad leaves at the bottom of a large bowl, add the chicken/turkey and cheese pieces
  6. Top with the sauce
  7. Toss before serving and decorate with the rest of the walnuts
