Ingredients
  1. 500g macaroni
  2. 350g mixed cheese leftovers, thinly sliced or grated
  3. 50g butter
  4. 50g plain flour
  5. 650ml milk
  6. 2 tbsp Dijon mustard
  7. 1 clove of garlic crushed
  8. 2 tbsp of olive oil
  9. Freshly ground black pepper
Instructions
  1. Preheat the grill.
  2. Bring large pan of water to boil and cook the macaroni according to pack instructions.
  3. Drain and set aside.
  4. In a large saucepan, melt the butter, add the flour and cook for 1 minute.
  5. Slowly pour in the milk and stir constantly to avoid lumps.
  6. Once you have a smooth sauce, add the mustard, pepper, crushed garlic, and 3/4 of the cheese.
  7. Stir in the macaroni and mix all together.
  8. Tip into an ovenproof dish and scatter the remaining cheese over the mixture.
  9. Drizzle the oil on top, and pop under the grill for 5/10 minutes until golden brown.
