Ingredients
  1. 1 bunch watercress
  2. 1/2 iceberg lettuce
  3. 225g rashers streaky bacon
  4. 3 avocados
  5. 3 tbsp extra virgin olive oil
  6. Juice of 1 lemon
  7. 1 tbsp dijon mustard
  8. 1 tbsp chopped chives
  9. Salt and freshly milled black pepper
Instructions
  1. Trim the bacon and grill until crisp. Let it cool and break into pieces.
  2. In a large bowl, place the salad pieces. Top with avocado slices.
  3. Mix together the mustard, lemon juice,oil, salt and pepper and pour over salad. Toss all together.
  4. Sprinkle with the bacon pieces and decorate with the chopped chives.
