Ingredients
- 1 bunch watercress
- 1/2 iceberg lettuce
- 225g rashers streaky bacon
- 3 avocados
- 3 tbsp extra virgin olive oil
- Juice of 1 lemon
- 1 tbsp dijon mustard
- 1 tbsp chopped chives
- Salt and freshly milled black pepper
Instructions
- Trim the bacon and grill until crisp. Let it cool and break into pieces.
- In a large bowl, place the salad pieces. Top with avocado slices.
- Mix together the mustard, lemon juice,oil, salt and pepper and pour over salad. Toss all together.
- Sprinkle with the bacon pieces and decorate with the chopped chives.
