Ingredients
  1. 450g new potatoes
  2. Bunch of spring or red onions cut into pieces
  3. 6 baby tomatoes cut in half
  4. 3 peppered smoked mackerel fillets
  5. 1 small carton soured cream
  6. 4 tbsp mayonnaise
  7. 2 tbsp horseradish relish
  8. 2 tbsp chopped dill
  9. Salt and freshly milled black pepper
Instructions
  1. Cook the potatoes for 10-15 minutes until tender, leaving the skins on.
  2. Remove the skin from the mackerel fillets and cut into small pieces.
  3. In a large bowl, combine the soured cream, mayonnaise and horseradish. Add salt and pepper.
  4. Toss the potatoes into the sauce and top with the mackerel fillets and the baby tomatoes.
  5. Sprinkle over the chopped dill.
