Ingredients
  1. 2 large cucumbers
  2. Small bunch of mint
  3. 100ml chicken stock
  4. 1 garlic clove chopped
  5. 4 tbsp extra virgin olive oil
  6. Salt and freshly milled black pepper
Instructions
  1. Dice 5cm of the cucumber and reserve with a few mint leaves for decoration.
  2. Whiz remaining ingredients in a food processor until smooth. Add oil, chicken stock, salt and pepper.
  3. Transfer to a jug and chill for 1 hour.
  4. Pour the soup into 4 bowls, top with some diced cucumber and mint.
