Ingredients
- 2 large cucumbers
- Small bunch of mint
- 100ml chicken stock
- 1 garlic clove chopped
- 4 tbsp extra virgin olive oil
- Salt and freshly milled black pepper
Instructions
- Dice 5cm of the cucumber and reserve with a few mint leaves for decoration.
- Whiz remaining ingredients in a food processor until smooth. Add oil, chicken stock, salt and pepper.
- Transfer to a jug and chill for 1 hour.
- Pour the soup into 4 bowls, top with some diced cucumber and mint.
